Coconut Shrimp Rigatoni with Kale

I completely made this recipe up today. It ended up being delicious, but fair warning – it is definitely not healthy. Well…not as healthy as it looks.

  • 4 Cups Cooked Kale
  • 1 Tbsp Coconut Oil
  • 1 Bag Shrimp
  • 1 Box Rigatoni
  • Minced Garlic
  • Garlic Powder
  • Onion Powder
  • Old Bay Seasoning
  • Pepper
  • Italian Seasoning
  • 1 Jar Alfredo Sauce
  • 1 Stick Butter
  1. Sautee the kale and the butter. Set aside.
  2. Season the shrimp with a mixture of the seasonings – I don’t measure, I just season to my liking. I would go light with the Old Bay due to the amount of salt it contains.
  3. Sautee shrimp and coconut oil until shrimp are fully cooked.
  4. Stir in the alfredo.
  5. Stir in the Kale.
  6. Add more seasonings – specifically Italian, and Garlic Powder. You may want to add a little parsley as well, but not a necessity.
  7. Simmer for about 6 minutes.
  8. Cook your Rigatoni while the sauce simmers. Drain.
  9. Combine the sauce with the pasta.
  10. The sauce may look a little greenish because of the kale. I thought it was cool.
