Apple Cranberry Pancakes

I am still working on figuring out what exactly makes something Vegan – this recipe has a few offenders. I made a couple of changes to the original recipe, but it turned out tasting delicious!!

  • 1 cup Whole Wheat Flour
  • 1 tbsp Cane Sugar
  • 2 tsp Baking Powder
  • 1/8 tsp Salt
  • 1 cup Almond Milk
  • 1 tbsp Vinegar
  • 3 tbsp Coconut Oil
  • 1 Peeled Apple
    • Cinnamon, Nutmeg, 1 tsp Vanilla
  • 1 cup Cranberries
  1. Place 1 tbsp coconut oil in a small pan on medium heat.
  2. Chop up the apple in to small pieces and place in the pan. Sprinkle seasonings on top. Cook for about 10 minutes, until apples are soft.
  3. Whisk together flour, sugar, baking powder, and salt in a bowl.
  4. In a different bowl whisk together almond milk and vinegar. This will make your almond milk like buttermilk!!
  5. Let the mixture sit for 10 minutes. Add in the apples and a handful of cranberries.
  6. Whisk the milk and flour mixture together well.
  7. Turn the griddle to medium heat and spread 1 tbsp of coconut oil across it.
  8. Spoon the pancake batter onto the griddle. Flip the pancakes when the bubbles have stopped bubbling.Cook until the other side is done and remove from heat.
  9. Top with maple syrup and cranberries.Serve with your favorite fruit.
