Short and Sweet Chili Lime Corn

Here is a really quick recipe to make your boring dinner a little more exciting! This works for corn on the cob or corn from the can.

All you need is:

corn-chili powder- lime juice

If you have corn on the cob – lightly sprinkle the cob all over withh chili powder. Next, individually wrap the cobs in aluminum foil, but don’t close them up all the way. Sprinkle lime juice on top of the corn. Bake at 350 degrees for about 30 minutes.

If you have loose corn – Add about 1 teaspoon of chili powder to the corn. Then add about 1/2 teaspoon of lime juice. I like to put the corn on the stove (with the juice from the can) for about 10 minutes. Don’t boil it, just get it hot. Make sure to stir it a few times.

Add butter to both if you’d like, I typically don’t for this recipe.

 

Voila! Impress your friends with cheap corn. 🙂
